  • Yields: Serves 4

Ingredients

BBQ Sauce

5 tbsp tomato paste

1 tsp dijon mustard

¼ cup apple cider vinegar

1 tsp garlic powder

¼ cup maple syrup

1 tsp onion powder

1 tbsp fancy molasses

1 tbsp smoked paprika

4 pitted medjool dates

1 tsp salt

1 tsp pepper

Pinch of cayenne pepper (optional)

¼ cup of water

'Pulled' Jackfruit

2 14oz cans of young jackfruit in water

1 tbsp olive oil

1 tbsp minced garlic

1/3 cup finely chopped red onion

Pinch of salt

Directions

BBQ Sauce

1Add all ingredients to a blender and blend until smooth.

'Pulled' Jackfruit

1Drain, rinse and de-seed the jackfruit.

2Heat olive oil in medium saucepan on med-low heat.

3Sauté garlic and red onions with a pinch of salt until till soft (approximately 5 minutes).

4Add the jackfruit and ¼ cup of water to the pan and cook for 6-8 minutes on medium heat.

5Add prepared BBQ sauce. Reduce heat to med-low and simmer for 45 minutes. Stir occasionally, using a wooden spoon to break up the jackfruit to give it a pulled texture. Slowly add ¾ cup of water throughout cooking time as the sauce reduces. Jackfruit is ready when the core of the jackfruit is fork tender and jackfruit has a pulled texture.

6Spoon on to buns, serve as is or add toppings of your choice.

7Enjoy!

This is a plant-powered version of a pulled pork sandwich, and a classic at Lettuce Love Café. Young jackfruit has a surprisingly meaty texture and takes on the flavour of the BBQ sauce. Try it at home, or on the menu at Lettuce Love Café, now open on Kerr Street in Oakville!
