Maple Glazed Blackened Atlantic Salmon
Yields1 Serving
SALMON
 7-ounce Fresh Atlantic
 Salmon Fillet
 Blackening spice (Paprika, pepper, garlic powder, onion powder, cayenne pepper)
PICO DI GALLO
 Julienne apples
 Carrot
 Red onions
 Parsley
 Cilantro
SALMON

Skin side down coat top of salmon with pre-mixed Blackening spice

Sear salmon in hot olive oil coated pan spiced side down

Turn salmon over and bake in oven at 400 degrees 10 minutes or until desired doneness

Drizzle desired amount of maple syrup to top of salmon just prior to removing from oven

In a bowl mix 1 tablespoon olive oil, 1 tablespoon fresh lime juice, salt and pepper to taste

Toss in apples, carrots, onions, parsley and cilantro

Plate Salmon over desired accompaniment, wild rice suggested, top salmon with slaw
