Maple Crème Brulee

Yields1 Serving
 6 egg yolks
 ½ cup sugar
 400 ml 35% cream
 100 ml Maple Syrup

Preheat the oven to 250℉ In a medium saucepan heat cream and maple syrup over medium heat just until small bubbles begin to form around the edges, remove from heat.

In a bowl combine sugar and egg yolks. Whisk until well blended and a light lemony colour.

Slowly whisk the hot cream to the egg yolk mixture.

Mix to combine.

Pour the mixture through a fine sieve into a large measuring cup.

Place 6, 4 oz ramekins in a baking pan. Divide the mixture between the ramekins. Pour enough hot water to reach halfway up the sides of the molds and carefully place in the oven.

Bake for approximately 40 minutes, until they tremble slightly in the centre. Cool then refrigerate.

Sprinkle sugar over the top and torch until the sugar is caramelized. Serve and enjoy!
