Santas Favourite Sugar Cookies
Yields1 Serving
Cookie
 1 cup unsalted butter, at room temperature
 1 cup icing sugar
 2 egg yolks
 ½ tsp pure vanilla extract
 1 ¾ cup cake & pastry flour
 ¼ tsp salt
 All Purpose Flour for rolling
Icing
 3 tbsp meringue powder
 4 c icing sugar
 6 tbsp warm water

In a large bowl beat butter and icing sugar together until light and fluffy. Beat in yolks and vanilla. Mix in flour and salt until combined. Wrap dough in saran wrap and chill for at least 2 hours or until firm. Preheat oven to 350°F. Roll out dough on floured board to approximately ¼ inch thick and cut out desired shapes. Bake on parchment lined baking sheets for 7-10 minutes or until barely browned. Cool completely on wire racks. Decorate as desired.

Sift icing sugar with meringue powder into a small bowl and add water a tablespoon at a time until smooth and thick enough to coat the back of a spoon. Whip until fluffy. Add colouring as desired.
