Despite the sudden arrival of a pandemic that shut down the economy and businesses world wide, Catherine Pearson and her team worked hard to open their new brewery May 23rd.
“Our timing couldn’t have been worse! We quickly pivoted and started to operate our canning line so we could offer curbside pick-up to our community who’s been eager to see us open. Although we had planned to open our doors and welcome everyone in person, we had to make sure everyone was safe. On May 23rd we opened our curbside pick-up to the community with seven unique varieties of craft beer. We had an overwhelming response. We had over 300 customers and sold out of five of our seven beers. Fortunately, our Brew Master has been busy brewing, so we can keep up with demand,” shares Pearson, Owner of Quayle’s Brewery in Oro-Medonte.
Quayle’s Brewery is located between Orillia and Coldwater on Line 12 North and offers a unique farm to glass experience. They started as a hop farm in 2015. For the last four years, they worked diligently with the Township of Oro-Medonte to finalize permits.
“We started as a hop farm and then built our brewery from the ground up. Our brewery is brand new. Our building is a historical recreation of the Musical Barn, which is a replica of a local landmark from the Town of Eady (1816),” informs Pearson.
Visitors can learn about how beer is made, what hops are, and discover the history of the musical barn. Pearson says they can host events both inside and outside for weddings, special occasions, board meetings, family reunions, and more.
“Simply come and sit on our patio overlooking our hop-yards and sample our 14 varieties of craft beer and delicious artisan menu. Our friendly, skilled staff are here to make your experience memorable.”
They grow, make, and serve enjoyable craft beer on-site at Quayle’s Brewery and always have new varieties to taste made with fresh local seasonal ingredients.
“We have a full 35 hL production system, 8 hL pilot system, and use our own crystal-clear spring water and fresh hops. We grow eight varieties of hops in our hop-yards to create an exceptional beer. Our brewery features a tap room with 14 taps, an acoustic lounge, event facilities, and a spacious patio overlooking our 12 acres of hop-yards,” explains Pearson.
Year round, a unique seasonal artisan menu filled with local ingredients will be offered to accompany a variety of beers.
“Our new small batch offerings include everything from bright pilsners and lagers to hazy IPAs, approachable sours, and creamy porters. We just released a double IPA made with five varieties of hops. We’re currently using our small batch system, so we can make a variety of delicious beer,” says Pearson.
